PINEAPPLE SALSA
|
1 Medium pineapple. Cored, peeled, and cut lengthwise in half inch wide strips Olive oil Coarse salt (Sea salt is best) 1 large red pepper, diced 1 medium red onion, diced
2-3 serrano peppers, minced 1/3 cup coarsely chopped cilantro 1-2 tablespoons freshly squeezed lime juice
Mix all ingredients and let sit for 30 minutes before serving May be used with baked or grilled fish, chicken, turkey, beef or pork. © 2009 Ez•Eatz
